In the Dolomites, a UNESCO World Heritage Site, small communities still live by customs passed down through generations: farming, foraging, and cooking with what the land provides, wasting nothing.
It is an old way of life that has quietly become urgent again — the same principle of restraint now at the center of the global push for sustainability, practiced here not as a policy, but as a habit never abandoned.
This story follows the women and men who tend that balance every day, in one of Italy's last places where it was never broken.
The accompanying video was produced in collaboration with La Cucina Italiana in support of Italy's candidacy for UNESCO Intangible Cultural Heritage status for its cuisine — a goal achieved in December 2025.
